Thick slices of juicy eggplant make up the crust of this delicious eggplant pizza. I experimented until I came up with my favorite toppings of mushroom, peppers, tomatoes and tomatoes and mozzarella cheese complement the eggplant perfectly.
Eggplant Lover's Pizza Recipe
Ingredients:
- 1 Large Eggplant
- 1 Tomato, diced in small pieces
- 1 6 ounce can of tomato paste
- 3-4 mushrooms, cut in small pieces
- 1 Bell pepper, diced in small pieces
- 1 Small onion, diced in small pieces or 1 tablespoon of dried onions
- 1 tablespoon garlic salt
- Salt & pepper to taste
- 1½ to 2 tablespoons of olive oil
- 1 cup of shredded mozzarella cheese
Instructions:
Preheat oven to 400 degrees (or preheat convection oven to 350 degrees).
Rinse eggplant.
Slice eggplant in thick slices (can be peeled or unpeeled based on personal preference).
Rub both sides of each eggplant slice with olive oil and sprinkle with salt and pepper to taste.
Arrange on baking tray in single layer.
Bake 20 minutes.
Remove from oven and flip each eggplant slice over.
Spoon tomato paste over each eggplant slice, covering the entire slice.
Sprinkle garlic salt over tomato paste.
Spoon tomatoes, mushrooms, peppers, and onions over tomato paste.
Add the shredded mozzarella cheese last and bake for another 10 minutes or until cheese is melted.
Makes 2-4 servings depending on size of eggplant and appetite.
